What kind of birds? Pheasants, quail and such will be buried in the thick grass and cattails trying to keep warm. Ducks and the geese fly over as they sat on the cold water. Turkeys do not seem to care one way or another, but the wind and rain make it possible for you to learn more movement and noise. As with any game animal, you must understand why they do what they do when they do, if you try to predict how they will react to certain things (eg climate).
